utritional oils are crucial in animal and human nutrition, as well as infant formula, as they consist of essential fatty acids that contribute to a healthy life. Over the past few years, the industry has seen an increased number of health product launches containing these oils as an ingredient.

The role of essential fatty acids Chemically, oils consist of a glycerol backbone that, in its natural state, binds with three fatty acids. The type of fatty acid determines the characteristics and health benefits of the oil. Unsaturated fatty acids can be divided into mono and polyunsaturated, both of which can be classified by the type of ‘omega’ in the fatty acid chain.


The most familiar omega categories are omega-3, 6 and 9. The ratios of omega-3, 6 and 9 fatty acids differs across oils and each have their own health benefits. There are four fatty acids that are most familiar: ■ Alpha linolenic acid (ALA) is an essential omega-3 fatty acid, which can be converted in the body to more complex omega-3 fatty acids such as EPA and DHA. Products containing ALA can claim to contribute to the maintenance of normal blood cholesterol levels.


■ Gamma linoleic acid (GLA) is an omega- 6 fatty acid. While most omega-6 fatty acids are known to be pro-inflammatory,
