WANT TO WHIP UP A QUICK AND EASY TREAT?


Why not try this super-tasty falafel and beetroot open sandwich, perfect with a slice of any Bürgen bread? Serves one.


Ingredients • 1 slice Bürgen Soya & Linseed bread • 50g readymade hummus • 4 slices cooked beetroot • 2-3 readymade falafels • Handful of rocket For the quick pickled onions: • A few thin slices of red onion • 2 tsp white wine vinegar


Method 1. To make the quick pickled onions, place the sliced onions in a small non-metallic bowl, drizzle over the vinegar and set aside for five minutes.


2. Leave them to become more vibrant and soften slightly.


3. To assemble the sandwich, place the bread on a serving plate, spread with hummus and top with the slices of cooked beetroot.


4. Crumble over the falafels, rocket and red onion to taste, then sit down and tuck in. Enjoy!
