This month we’re turning the spotlight on kitchen retailing from a cultural and religious perspective, looking at how traditions around food might impact design. We also explore how homeowners can recreate authentic cuisines from around the world using food-specific appliances, such as teppan yaki, pizza ovens, grills, wok burners and more. N


o matter which country, culture, creed or religion we belong to, certain


things unite us. And one of the most important things is coming together to cook and enjoy food. But while we all enjoy dining with friends and family, we all also have religious or cultural traditions


that might have


implications on the way our kitchens are designed.


The Kosher kitchen, in the Jewish tradition, might have the most significant implications in terms of layout, because meat and dairy cannot be prepared together. So, this is where we will focus first.

For the Jewish community there are observances that must be


adhered to in order for a kitchen to be kosher. Firstly, meat and dairy may not be prepared, stored or eaten together, so Jewish families will need separate

areas for preparing each of these food groups. This might mean having completely separate kitchens or sinks, separate cooking appliances and separate fridges/fridg- freezers, as well as separate areas for storing utensils and cutlery.

To cater for those that observe Halakha, many manufacturers have appliances with a special “Sabbath mode”, and appliances sold with certification from a halachic certification authority will have been judged to be


compliant with the rules. Sub

Gaggenau, Miele and CDA each offer appliances with this functionality.


Sub Zero and Wolf director Ricky Davies, comments: “Most Sub-Zero and Wolf appliances are certified as ‘Star K Approved’, relating to the term kosher, and this means they can be used over the Sabbath.


“On Sub-Zero refrigeration, the Sabbath setting stops the light going on or off when you open the door, so that you’re not switching something on or off during the Sabbath.


“On Wolf ovens it does the same with the oven light, you can select light on or off and it stays on that setting not changing when the oven door is opened and closed. The convection fans would not be used on the Sabbath setting.
