CHICKEN AND VEGETABLE

1 (15.9 oz) pkg Nature’s Promise Free from White Rice 3 tomatoes 4 tbsp olive oil


2 cups diced red onion 3 bell peppers 1 (0.75 lb) pkg boneless skinless chicken breasts


STEP 1 Prepare the rice according to package directions. Quarter the tomatoes. Heat 2 tbsp olive oil in a large sauté pan and cook the onion over medium-high heat, 2 min. Add the tomatoes and cook for 4 min. Stir into cooked rice. STEP 2 Meanwhile, cut the bell peppers into 2-inch pieces. Cut the chicken into 1-inch pieces and thread onto skewers with peppers. Brush with remaining olive oil and season with salt (in moderation). Cook on a grill or grill pan for about 9 min., turning occasionally. Chicken is cooked through when an internal thermometer reads 165°F. Serve skewers with rice.
