WITH CHERRY TOMATOES This ceviche features simple and fresh ingredients. Enjoy it on salad, tacos, or with corn chips.

2 pints cherry tomatoes or 2 large heirloom tomatoes 1 avocado 1 jalapeño ½ bunch fresh cilantro
½ cup diced red onion ½ cup lime juice 8 oz fresh mahi mahi fillets*
STEP 1 Quarter the tomatoes and dice the avocado. Seed the jalapeño and dice finely. Chop the cilantro. Dice the red onion. Set all prepped produce in a bowl with the lime juice. STEP 2 Cut the mahi mahi into ½-inch cubes and add to the bowl. Season with salt (in moderation) to taste. Gently stir ingredients until fully combined. Set in the refrigerator, covered, for 15 min. before serving.
