ARUGULA SALAD WITH


PREP TIME 10 MIN. – COOK TIME 5 MIN. READY IN 15 MIN. – SERVINGS 6


¼ cup pine nuts 2 nectarines 2 cups cherry tomatoes 1 lemon


1 (5 oz) pkg arugula 2 cups mozzarella pearls 3 tbsp olive oil


STEP 1 Preheat a grill or grill pan to medium-high heat. Toast the pine nuts in a pan without oil or butter. Slice the nectarines and cook on the grill until grill marks form, about 1–2 min. per side. Halve the cherry tomatoes. Zest and juice the lemon. STEP 2 Set the arugula in a bowl with the mozzarella. Add the tomatoes and grilled nectarines. Whisk lemon juice and olive oil together in a bowl and gently fold into the salad. Garnish with toasted pine nuts and lemon zest.


Tip Garnish with 2 tbsp chopped fresh basil.
