BACON AND EGG NAAN PIZZAS Enjoy these mini breakfast pizzas any time of the day.


READY IN 15 MIN. – SERVINGS 4


4 slices precooked bacon 1 (10 oz) pkg frozen spinach, thawed


1 cup shredded mozzarella 1 (8.8 oz) pkg naan bread 2 large eggs


STEP 1 Prepare a grill for indirect cooking by heating one half of the grill to medium-high heat, and the other half to the lowest heat setting. Reheat bacon in the microwave according to package directions. Squeeze liquid from spinach and place on paper towel. STEP 2 Sprinkle cheese and distribute spinach evenly between the 2 naan breads. Break bacon into large chunks and arrange on top of cheese and spinach. Transfer naan pizzas to sheet tray. STEP 3 Place pizzas on the half of the grill set to low heat. Crack an egg in the center of each one. Close the grill and cook, 8–10 min., until cheese is melted and egg is cooked through, rotating every 3–4 min. Slice pizzas and serve.

SICILIAN-STYLE PASTA


WITH SARDINES Be transported to Italy with this pasta tossed with tender kale and toasted pine nuts.

1 (16 oz) box linguine 2 shallots ½ bunch kale 1 (3.75 oz) can sardines in olive oil


1 tbsp minced garlic 1 tbsp pine nuts 1 tbsp olive oil ¼ tsp red chili flakes 2 cups tomato sauce


STEP 1 Cook the pasta according to package directions until al dente. Cut the shallots into rings. Remove the woody stems and ribs from the kale and slice into ½ inch strips. STEP 2 Drain the sardines from the can, reserving 1 tbsp oil. Set the reserved oil in a pan and cook the shallots, garlic, and pine nuts for 3 min. Add the olive oil to the pan. In batches, add the kale. Cook until the kale is wilted and tender, 6 min. Season with chili flakes, salt (in moderation), and pepper. STEP 3 Heat the tomato sauce in the microwave. Divide the pasta among 6 dishes and top with pasta sauce, kale, and sardines.
