This healthy (dessert-like) breakfast will make your morning feel extra special!
BANANA BLUEBERRY OATMEAL BAKE
PREP TIME 10 MIN. – COOK TIME 55 MIN. READY IN 1 HOUR, 5 MIN. – SERVINGS 6
2 ripe bananas ¾ cup plain or vanilla Greek yogurt* 2 cups almond milk** 2 tsp vanilla extract 2 tbsp honey or maple syrup 2 large eggs 2 cups old- fashioned oats 2 tsp cinnamon
1 tsp baking powder ½ tsp kosher salt 2 cups blueberries, fresh or frozen Optional toppings: Yogurt, aerated whipped cream, toasted nuts, berries
*Use vanilla Greek yogurt for a sweeter outcome.
**Or other preferred milk
STEP 1 Preheat oven to 375°F. Mist a 9x13 casserole dish with oil spray. Add bananas and mash. Add yogurt, milk, vanilla, honey (or maple syrup) and eggs (you can crack eggs right into casserole dish; be sure to whip them with a fork before mixing into entire wet batter). STEP 2 Mix and mash wet ingredients together until it’s as smooth as possible; you will most likely still have lumps throughout. STEP 3 Add oats, cinnamon, baking powder, salt, and fresh or frozen blueberries; mix so ingredients are evenly distributed. Bake about 55 min. STEP 4 Remove, let slightly cool and slice into large squares. Garnish with optional toppings.
