HOW TO PEEL FRESH GINGER
Use the edge of a metal teaspoon to scrape away the thin skin of fresh ginger root. This will lead to less waste than trimming off the skin with a knife. You can also freeze fresh ginger for later: Wrap the unpeeled root in plastic, then freeze. To use, finely grate the frozen ginger (no need to peel first).
