BROILED STEAK WITH LIGHT CREAMED SPINACH

2 (12 oz) Taste of Inspirations® Boneless Strip Steaks 2 tbsp olive oil, divided 1 tsp flour


½ cup 2% Greek yogurt 2 (6 oz) pkgs fresh spinach 1 clove garlic, minced


Greek yogurt makes a light, creamy sauce for the spinach.

STEP 1 Place a large cast-iron pan under broiler. Preheat broiler. Rub steaks with 1 tbsp oil. Season with salt and pepper. Carefully place steaks in pan under broiler. Broil steaks 3–4 min. per side., or cook to desired temperature. STEP 2 Meanwhile, in a small bowl, mix the flour with yogurt until smooth. In a 10-inch skillet, heat remaining 1 tbsp oil on medium. Add the spinach in batches, stirring until fully wilted. Season with salt and pepper. Add the garlic and cook 30 sec., stirring constantly. STEP 3 When spinach has wilted, add yogurt mixture to skillet. Cook 1 min. Season with salt and pepper and serve with steaks.
