of course more water. This mixture is turned a day later, and more water is added. The bunker is filled on day four. The material is removed on day seven and nine, and the compost is transferred from one bunker and filled again into another bunker. On day 11 the compost is filled in a phase II tunnel. As the photo shows, the compost has a noticeably short structure in comparison with compost made using normal wheat straw. Due to the low filling weight in the bunkers, anaerobic patches can be prevented as far as possible. The compost is pasteurised and the process con- tinues in the same way as anywhere else in the world, however in this case the climate unit in the tunnel is regulated manually. The air temperature measured at the return outlet indicates the com- post temperature and is checked 24/7. Two addi- tional tunnels are currently being constructed so
that soon one tunnel can be filled every day. Whether the process has proceeded properly can only be assessed once the tunnel has been ope- ned. It’s essential to ensure there is no ammonia left in the compost. Throughout the tunnel, the number of actinomycetes gives the compost a white appearance, which also indicates that the phase II process went well. The compost is removed from the tunnel by a tractor and placed in a hopper. This hopper gra- dually deposits the compost onto a conveyor belt. Spawn is scattered onto the compost and then mixed through it. This compost is immediately filled into bags that have a diameter of 25-30 cm and weigh about 10 kg. After the bags have been filled, they are transported to the growing rooms and placed on shelves.
