A cleaner routine

In a further step towards achieving and maintaining high hygiene wiping standards, Smartwipe is supplied using a centrefeed style of pull, meaning that the wipes are kept covered until required.

Cross-contamination is usually the result of raw food being in contact with prepared food, which is why so much guidance is available about storing raw foods. For example, placing it at the bottom of the chiller cabinet so that any drips do not reach cooked food.


Similarly, colour-coded equipment such as knives and cutting boards – each colour having its own defined usage – are recommended as good practice.


Of course, these methods only work if the staff are reminded both of the importance of avoiding cross- contamination, and which colour codes are used for what purpose. This is why displays are becoming ever more evident in kitchens, especially in high risk sectors such as healthcare.


There is, however, an area where sometimes there is less attention paid, and that is wiping.


The bottom of that chiller cabinet has to be cleaned after use, and if the wiper used is subsequently then used to wipe other shelves, there is an immediate risk of spreading the bacteria.


Even worse, cloths are often wet and warm for extended time periods of time, which means they would be at risk of transferring high levels of harmful bacteria.


If they are not disposed of at the end of the day, they must be washed at a high temperature or chemically disinfected.

Consider the apparent anomaly of gleaming, tidy places of work, filled with modern equipment yet instead of using disposable wipers, it is kept clean by using a bag of rags. Northwood believes that in some instances a bag of rags may well be an adequate way of meeting an organisation’s wiping needs – but not many!
