51 Food & Beverage Analysis Salmonella Testing Made Fast, Convenient and Accurate


As salmonella bacteria are the most commonly reported cause of foodborne illnesses, never has testing been so important. However, while conventional salmonella test kits involve numerous complicated steps, Hygiena International’s recently developed InSite Salmonella micro-organism colorimetric test is rapid, convenient and extremely accurate. It combines both swab, pre-enrichment and selective enrichment in a single self-contained swab device for testing environmental surfaces, giving results in 24 hours.


Hygiena InSite is a cost-effective Salmonella screening test for food contact surfaces, processing equipment and general environmental samples that combines the principal steps of pre-enrichment and selective enrichment in an all-in-one swab device. The test consists of a large sponge swab pre-wetted with a neutralising agent – to counter the effects of residual sanitisers – and a pre-enrichment broth to enable the detection of low numbers of Salmonella.


The bulb contains the AOAC enrichment Salmonella Indicator Broth PDX-SIB. After activation and incubation, a colour change of the selective enrichment broth from purple to yellow is considered as a ‘presumptive positive’ result.


A brief pre-enrichment period of just six hours enables the detection of presumptive positive samples within a 24-hour period. Alternatively, optional overnight or 24-hour pre- enrichment permits the detection of such samples in 48 hours. The test requires fewer materials, fewer steps and less manipulation by users. Furthermore, its all-in-one format maintains security by confining hazardous pathogens.


Screening for pathogens is a vital element of environmental monitoring programmes for certain food manufacturing plants. Not only does it confirm the effectiveness of a sanitation procedure, environmental monitoring also forms part of a comprehensive preventive control verification programme.


It is imperative that testing for the presence of Salmonella is carried out during facilities manufacturing and processing as well as wherever there is packing/holding of foods for consumption. However, while there are probably 40 different methods for salmonella detection currently commercially available, all require a skilled operator and are time-consuming, laborious and prone to errors at several stages.

Neogen’s Lab M has developed a unique chromogenic media that offers a superior ability to simultaneously detect numerous strains of Salmonella of concern to the food and animal feed industries, while inhibiting or minimising other organisms.


This new Chromogenic Agar for Salmonella Esterase (CASE) uses a proprietary dual chromogenic system to differentiate between Salmonella and non-target organisms that grow on the agar. The new media, available in pre-poured plate or dehydrated culture media (DCM), is suitable for use within the ISO 6579 protocol - the international standard for testing food and animal feed for Salmonella species.


“Currently available Salmonella chromogenic media typically produce pink purple colonies that are sometimes hard to distinguish — whilst this new agar gives turquoise-blue and black colonies that are very easy to identify particularly with low C8-esterase activity Salmonella strains,” said Steve Chambers, Neogen’s European Sales and Marketing Director. “CASE media also is able to detect specific Salmonella serovars that are often missed by existing media, including non motile and weaker strains such as S. Dublin, reducing the risk of reading false negative results. The media was developed at Neogen’s Lab M facilities specifically for food and animal feed manufacturers, as well as poultry and pork producers and processors.”


CASE detects a wide range of Salmonella species and has been shown to produce enhanced specificity in the detection of important Salmonella serotypes, including S. Gallinarum, S. Pullorum and S. Dublin. Additionally the formulation of CASE means growth from background flora is significantly reduced and closely related Enterobacteriaceae, such as Citrobacter and Enterobacter, are clearly defined. This makes difficult matrices easier to read and can significantly reduce the amount of unnecessary


confirmations required which can be costly and time-consuming.

Two New Refractometers for use in Factory Environments Launched


Xylem’s Bellingham + Stanley brand has launched two new refractometers particularly suited for the use in the factory. Commonly, the RFM-M Series instruments feature a 4” colour display and robust, tactile alphanumeric keypad that allows users to configure the instrument conveniently whilst offering extra protection in harsh environments.


Particularly, the RFM700-M Series refractometers offer the same automatic temperature compensated readings as their predecessors but with more features. These include a comprehensive display of measurement parameters (sample reading, temperature, quality & scale identifiers), significant data storage and an on-board library of over 20 recognised scales. RFM700-M series refractometers are therefore particularly suited for use in food and beverage packing halls, Tare Houses in the wine, tomato and sugar processing industries as well as within in confectionery manufacturing.


Additional features for the RFM300-M models include Peltier temperature control, RFID user clearance and audit trails with electronic signatures that facilitate use in controlled environments such as those operating in accordance with FDA regulation 21 CFR part 11. Importantly, the top level RFM340-M refractometer boasts a 3-decimal place Brix resolution (6 d.p. RI) that takes it to the next level when controlling critical blend ratios of edible oils, carbonated soft drinks and fruit juices.

Two New Special HPLC Analysers for Food Safety Requirements Released


Shimadzu has released two new i-Series food safety analysers which provide fast, high-sensitivity tests for controlled components such as mould toxins (mycotoxins) and synthetic antimicrobials included in the raw materials for food products. Two special kits that include analytical conditions for controlled components and special analytical columns enable immediate sample measurement. The i-Series food safety analysers support rapid screening for 10 mycotoxins applicable to wheat flour, rice flour and other grains as well as apples and milk samples, and 24 synthetic antimicrobials applicable to chicken, pork and beef samples. Results can be checked quickly with the LabSolutions analysis software.
