1/2 tsp salt 1/2 tsp black pepper 3 Springer Mountain Farms boneless chicken breasts, grilled and cubed I Jar of Lidl Tikka Masala Sauce Jasmine Rice ¼ cup chopped walnuts (Optional) 1 T finely chopped fresh coriander (cilantro) Garlic or Spinach Naan
Chicken Tikka Masala
Here’s a quick, easy, inexpensive way to enjoy the wonderful flavors of India, even if you know nothing about cooking! (Like me!) The part that makes it easy is buying the already prepared sauce. This is just another of the great things about Lidl grocery store. The German grocer stocks many items unavail- able at traditional Southern markets, includ- ing Indian goodies. Previously, I have enjoyed Lidl’s own brand of Indian “TV dinners,” masala and biryani and more. I still love those fast, spicy dinners, but this one is even closer to restaurant quality. Of course, noth- ing beats the real thing at India Palace in Greenville, SC. Nothing! But this is mighty tasty! The sauce is a creamy tomato sauce with traditional spice blend.
Ingredients 1/2 Cup Greek Yogurt 2 cloves garlic peeled and minced 1 T minced ginger Juice from half a lemon 1 tsp ground coriander’1/2 tsp cumin 1 tsp paprika Pinch of cinnamon
Directions (Serves Two) 1. Place the chicken pieces into a bowl or freezer bag with the yogurt, garlic, ginger, lemon juice, coriander, tumeric, cumin, pa- prika, cinnamon, salt and pepper. Mix every- thing together and put in fridge to marinate for 2-3 hours. 2. Grill chicken. 3. Prepare rice according to directions (I use Chang’s microwave steamtable Jasmine rice. Ready in 2 minutes) 4. Heat sauce on stovetop, adding in chicken chunks and walnuts. 5. Simply serve over rice, topped with fresh coriander. Serve with Naan bread. 6. Pairs well with an ice-cold beer. Flying Horse from India is perfect, but your favorite brew will serve just fine. •
