INGREDIENTS: For the dressing


¼ cup freshly squeezed lemon juice


2 tablespoons cold-pressed hemp oil


1 tablespoon extra-virgin olive oil


1 clove garlic, pressed ¼ teaspoon salt, or to taste 1/8 teaspoon freshly ground black pepper, or to taste


For the tabbouleh 1 cup quinoa


1½ to 2 cups water


1 cup diced heirloom tomato 1 cup peeled and diced cucumber


¼ cup minced red onion 1 cup chopped curly-leaf parsley


option ¼ cup chopped fresh mint quinoa


DIRECTIONS: Make the dressing: Mix the lemon juice, oils, garlic, salt, and pepper in a small bowl and set aside. Make the tabbouleh: Place the quinoa in the Instant Pot with 1½ cups of water and salt. Secure the lid making sure the top vent is closed. Press the “Manual” button and set for 5 minutes at high pres- sure. When done, let the pres- sure release naturally and re- move the lid carefully and stir until fluffy. Let cool to room temperature. (To cook quinoa on the stovetop, combine the quinoa and 2 cups water in a 2-quart saucepan and bring to a boil. Cover, reduce heat to medium-low, and cook un- til all the water is absorbed, about 18 to 20 minutes. Re-
