250g butter, margarine or low-fat baking spread 250g dark brown sugar 6 tbsp golden or light corn syrup 500g porridge or rolled oats 60g cocoa powder, sifted 2 tsp vanilla extract 1 pinch of salt 200g plain chocolate chips


YOU WILL NEED


35 x 25cm deep baking tin, greased and lined


1 Preheat the oven to 180C/gas 4. Place the butter, dark brown sugar and syrup in a large heavy pan and simmer over a gentle heat until the butter and sugar have melted. Add the oats, cocoa, vanilla and salt to the pan, and stir well so that all the oats are coated and the cocoa powder is mixed in.


2 Tip the mixture into the lined pan and spread out in an even layer using a spatula or the back of a large spoon.
