utumn is a time for change and getting back into the swing of things. Students are back in school and the weather gets cooler. This year why not develop or replace an old habit with a new healthy one. Spaghetti squash really lends itself to a healthy alternative to pasta and now is the time to try it.
A 2 spaghetti squash
Approximately 1 cup of olive oil 4 cloves of garlic, cut very small and thin 3 tomatoes
1/2 cup of fresh basil 2 tablespoons of Parmesan cheese 1/2 cup of pinoli nuts
1. Cut each spaghetti squash in half. 2. Scoop out the pits. 3. Rub olive oil on the inside of the squash. 4. Put on a baking sheet and bake at 350 for 35 minutes. 5. While the spaghetti squash is baking, sauté the sliced garlic cloves, tomatoes, fresh basil, and pinoli nuts in the remaining olive oil.
6. When the spaghetti squash is finished take a fork and scrap the insides so that you get a spaghetti-like material.

7. Put the squash in the pan with the sautéed vegetables and sauté again for a minute.
8. Add Parmesan cheese and enjoy.
