Rookie Cookie’s Recipe Black-Eyed Pea/Vegetable Salad
Mini Spy and her friends are happy to be back in school. See if you can find: • pencil • ruler • heart • number 7 • corn cob • cheese
• number 6 • ladder • whistle • letter E • apple • needle • shoe
You’ll need: • 3 tablespoons red wine vinegar • 2 tablespoons olive oil • 2 tablespoons fresh cilantro (optional) • 1 garlic clove, minced • 2 (15.5-ounce) cans black-eyed peas, drained and rinsed • 1/2 cup purple onion, diced • 1 small green bell pepper, diced • 1 cup yellow corn What to do: 1. Whisk vinegar, oil, cilantro and garlic in a large bowl. 2. Add all other ingredients and toss to coat evenly. 3. Chill for 2 hours before serving.
