Creamed Pheasant 1 pheasant, cut up 8 slices of bacon
1 medium onion, chopped Salt and pepper to taste 1 small can cream of mushroom soup 1 teaspoon soy sauce 1/2 cup celery, diced 1 cup sour cream 1 1/2 cups Swiss cheese, grated
Cook bacon in large skillet. Set bacon aside and crumble. Brown pheasant in bacon drippings. Move pheasant to a large casserole dish. Saute onion in bacon drippings, then top pheasant with bacon and onion. Season with salt and pepper.
In a mixing bowl, combine soy sauce, soup, celery, and sour cream. Spoon over pheasant. Top with cheese and bake at 325 degrees F for 1 1/2 hours.
Blanketed Pheasant 2 cups cooked and boned pheasant 3/4 cup onion, fi nely chopped 4 tablespoons bu er, so 3/4 cup carrots, grated 3/4 cup celery, fi nely chopped 1/4 cup parsley, chopped 1 teaspoon salt 1/8 teaspoon pepper 1 loaf frozen bread dough, thawed
Combine fi rst 8 ingredients in a mixing bowl.
On a greased baking sheet, roll bread dough to a 12 x 15 rectangle. Spread pheasant mixture down the center of the dough. Bring long sides together and pinch closed. Pinch ends and tuck under to seal.
Bake in a 350 degree F oven for 30 minutes, or un l bread is slightly browned. Allow to cool slightly before slicing to serve.

Lions Clubs Interna onal’s Recycle for Sight program collects, cleans, sorts, and distributes prescrip on and reading glasses to low- and middle-income communi es, providing a signifi cant improvement in the lives of those helped.
Look around your house. Do you have a pair of unused glasses tucked in a drawer? Several of us at Northeast Oklahoma Electric did. We started a collec on of glasses from employees, then realized that our members might appreciate the opportunity to make sure their unused eyeglasses benefi ted someone in need, too.
Through the month of March, drop your glasses off at our Vinita or Grove offi ce. We will ensure they are delivered to Lions Club and put to work, providing vision to someone that could use a li le hope.
