compost requires a unchanging sched- ule. The weekend is often an issue here, and attempts are made to draw up a schedule that works round the weekend. This means that one batch is subjected to a different schedule than another. Nevertheless, the weekend does seem to be losing its scared status so that the same schedule is applied to all batches.

Filling weight

The filling weight in bunkers and tun- nels also greatly influences quality. All the extra tons of compost a plant can produce add up to extra profits. But us- ing extra heavy-duty fans will not be enough to manage conditions properly. With too high filling weights, conces- sions will often also have to be made in other areas: fermentation, moisture, temperature, ammonia and structure – ultimately the mycelium quality will suffer. Composters know from experi- ence what the maximum filling weight for their own plant is. Do not be tempted

to fill more compost than your installa- tion can cope with!

Mycelium growth Mycelium is damaged during the process of removing incubated compost from the tunnel and filling in the growing rooms. The more extensive the myceli- um growth in and around the straw par- ticles, the less damage is done and the quicker the mycelium will recover, and the less likely it is to absorb too much water. Compost incubated for 14 days is sometimes reasonably and sometimes poorly incubated. This will be clearly re- flected in the mushroom yield. Good production is feasible on 14-day incu- bated compost, but can occasionally be disappointing. Mycelium growth of 17 days will nearly always result in good to extremely well incubated compost and therefore give the required stability in the cultivation process.
