Wacky Cake


Wacky Cake is an example of old fashioned ingenuity. It contains no eggs or milk and was created during the Depression when dairy products were scarcer. It was popular during World War II when such staples was rationed. It’s all stirred together in the pan so you don’t dirty any extra dishes. It produces an easy, lovely chocolate cake.


11 ⁄2 cups all-purpose flour 1 cup sugar


4 tablespoons unsweetened cocoa powder 1 teaspoon baking soda 1 teaspoon salt 1 tablespoon white vinegar 1 teaspoon vanilla extract 6 tablespoons vegetable oil 1 cup cold water Preheat oven to 350 degrees.


Sift flour, sugar, salt, soda, and cocoa together into an 8x8 inch ungreased cake pan. Make three depressions. Pour oil into one well, vinegar into second, and vanilla into third well. Pour water over all, and stir well with fork.


Bake at 350 degrees for 30-35 minutes, or until tooth pick inserted comes out clean. Frost with your favorite icing.

The Dressing for Wilted Lettuce from Grandma Lucille Goodwin


Garden lettuce (use red leaf lettuce or something similar)


1 cup sugar ⁄4


⁄4 1 cup vinegar


1 tablespoon bacon grease 3 tablespoons water


Boil the sugar, vinegar, bacon grease and water, and pour it over the lettuce and serve.


Aunt Carol’s Tips:


I asked my aunt Carol Goodwin King to share a few tips for this story:


• Always cut your brownies with a plastic knife to prevent the brownies from tearing.


• Tear your lettuce instead of cutting it and it won’t turn dark.


• To remove the core from iceberg lettuce, bang it on the counter and it will pop out. You might have to bang it a couple of times.


• If you are breading your meat, dredge it in flour, egg mixture and then back in the flour or dry mixture so the egg won’t slide off.

with an odor, make a paste of dry mustard and hot water and use it to wash the inside and it will eliminate the odor.


• If you have a plastic container and it molds while food is in there, anything you store in there afterward will mold faster, so you clean the dish with soap and water and then take vinegar and pour vinegar in it and swish it around to kill the bacteria so the mold won’t come back.


• Before you place a plastic container filled with a red or tomato sauce in the microwave, spray the container with cooking spray first to prevent it from staining.
