7-Up Cake


Cooking with soda is an old-school concept, and a variety of beverages from Coke to Dr Pepper to 7-Up found their way into everything from cakes, to meat to Jell-O molds. 7-Up Cake doesn’t actually taste much like the soda but it is a wonderful moist, pound cake and the soda lends an almost sponge-like texture.


There are various recipes out there and some taste like vanilla cake, whereas others have a more pronounced lemon-lime flavor. This one calls for a box of pudding, so if you want a lemon flavor, use lemon pudding instead of vanilla. The vanilla is popular in our household.


1 yellow cake mix


1 package lemon or vanilla pudding (depends what type of flavor you are going for)


11 ⁄4 ⁄4 cups 7-Up


4 eggs 3


cup canola oil


Glaze: 1


⁄2 cup 7-Up


3 tablespoons melted butter 1 cup powdered sugar Preheat oven to 350 degrees.


Beat together cake mix, pudding, 7-Up, eggs, and oil until combined.


Pour into a Bundt cake pan that is thoroughly greased.


Bake 45-50 minutes or until cake is golden and starts to pull away from edges. Allow to cool for 10 minutes and then flip the cake onto a cake platter. If it sticks, use a toothpick to run around the center of the cake.


Then stir together the ingredients for the glaze. Poke cake with a toothpick all over and brush half the glaze on the cake while it’s still warm. Reserve the other half of the glaze and pour it over cake just before serving.
