Recipes by Pushpa from the Spice Hut - Butter Chicken


1 kg chicken diced


1 cup (240ml) of chicken stock 1 cup (240ml) cooking cream 120ml natural yoghurt 2 tspn garam masala 2 tspn ground coriander 1 tspn chilli powder 2 tspn grated fresh ginger 2 tspn garlic paste


2 tbspn white wine vinegar


60ml tomato paste/frito/ canned tomatoes 80g butter


Salt as required 1 cinnamon stick


4 cardamon pods, crushed 1 large onion, finely chopped


Mix spices, ginger, garlic, vinegar, tomato paste, yoghurt and marinade the chicken in this sauce, coating it well. Leave it overnight.


Heat butter and fry the onion until brown. Add the chicken mixture and cook for 5 minutes.


Add salt and stock and simmer for further 10 minutes. Add cream and cook further.


The sauce should be thick and creamy. If you wish to make it more spicy add more chillies. Enjoy.
