or Italians living without pasta is not an option, but can a producer of ‘normal pasta’, using


a raw material containing the best gluten, produce an excellent gluten free pasta?


The answer is Yes. The development team knew that the flavour could not be the same due to the different raw materials, but it was of great importance to produce a gluten free pasta that was no better or worse in flavour, just different. It was not to be just for those on a gluten free diet but a new cooking


opportunity for everyone. It was equally important to produce a healthy product, which in the end might even be better than normal pasta! The recipe was


carefully developed using corn, rice and quinoa to produce high fibre gluten free pasta, in the knowledge that many on a gluten free diet may struggle to eat enough fibre, in fact there is 7g of fibre per 100g of pasta. The super food quinoa adds even more nutrients to Garofalo’s gluten free pasta; it contains fibre and minerals such as phosphorus, magnesium, iron and zinc. It is also an excellent source of vegetable protein and obviously gluten free. Garofalo gluten free pasta is not


produced in its factory in Gragnano because of the risk of contamination with pasta containing wheat.


Garofalo chose shapes that work with the recipe as the primary factor and now there are 8 in the range including Fusillone, Casarecce, Anellini giving choice and interest for the consumer who has to follow a gluten free diet. The phrase “it’s good considering it’s
