The great British sausage is back – and not before time! In the same way that real ale has been resurrected and is now celebrated, traditional butchers have restored the integrity of the British banger and now regularly battle against each other in competitions as they develop new and intriguing flavour combinations. Sausages are no longer cheap – but that’s a good sign. They are now made from top-quality ingredients so although shoppers are paying


more they are getting real value for their money. I would always


urge people to buy their sausages from independent butchers – and the same goes for bacon. Most of us now offer proper, dry-cured bacon which means real flavour and no nasty white residue in the frying pan.
