A drop of mulled wine is the perfect way to warm up guests coming in from the cold. It is simple to make, and can be gently re-heated at any point. Here is an old family recipe from one of the FOODLOVER team. The spices can be adjusted an altered to suit taste, and if the end product isn’t sweet enough, just add more sugar.
2 x 75cl bottles medium-bodied red wine
2 oranges, quartered 1
/2 lemon
Small piece (4-5cm) of root ginger
2 cinnamon sticks 4 tbsp brown sugar
PARMESAN SHORTBREADS WITH BEETROOT PESTO
Beetroot is in season and adds a vibrant colour and delicious earthy flavour to these cheesy shortbreads. Sprinkle the topping on carefully to ensure even distribution.
Makes 20
200g beetroot, cooked and peeled 30g toasted pine nuts 45g Parmesan cheese, grated 1 garlic clove 4 tbsp olive oil Salt and freshly ground black pepper 20 Parmesan shortbreads
To garnish: 15g toasted pine nuts 10g Parmesan, grated handful of micro cress
1 For the pesto, place all the ingredients together in a food processor; pulse until a rough paste forms and the ingredients are well combined.
2 Taste to check the seasoning.
3 Use a teaspoon to top shortbreads with the pesto.

4 Garnish with the toasted pine nuts, Parmesan shavings, and micro cress. Serve at room temperature.

Make the pesto 2 days in advance and store in the fridge.
CHEESE & BACON POTATO SKINS
Potato skins are such a simple dish to create. Simply bake potatoes in an oven at 200o
C for 30 minutes, scoop out the flesh, line with butter and fill with ingredients,
4 whole cloves 20 – 30ml brandy (optional)
1 Place all spices, sugar and one bottle of wine into a saucepan and heat until all sugar has dissolved.
2 Add second bottle of wine, stir and warm through (do not boil) for 10-15 minutes to allow flavours to infuse. Take off heat, add brandy and stir. Serve immediately in heat proof glasses!
Do not allow the mixture to boil – this will burn off all alcohol in the wine.
Lower the alcohol content: Add small amounts of water, or alternatively replace the oranges with approximately 150ml orange juice.
then top with cheese and return to the oven until the cheese is golden brown! The possibilities are endless, but why not try the following:
4 baking potatoes, scrubbed 5 rashers lean bacon, cooked and cut into small pieces
150g grated vintage cheddar
3 spring onions, sliced Salt and ground black pepper Olive oil Butter Sour cream, to serve
