resh milk is collected daily from our farm assured local farms, most within 15 miles of the dairy; where the cows graze the lush pastures in the heart of Somerset. The milk is made into cheddar at the dairy near Bruton using our 150-year-old famous secret family recipe. Ivy Clothier’s family have been farming and making cheese on the Mendip Hills since the late 1700’s and now over 150 years later, her family are still using the same recipe for turning their fresh milk into cheese with perfect texture and exquisite taste. This combined with careful maturation of up to two years under the watchful eye of the head cheese maker, brings all the ingredients first derived from the lush pastures of the Mendip Hills in to full development of taste and texture which 19th century food guru, James T Law described as; "rich and mellow, with consistency of body, of close silky texture, true and even colour-- a prepossessing appearance and finish...". The 150 years of tradition are now matched by over 150 trophies, awards and prizes won by Wyke Farms at national cheese shows. The family are still passionate about farming and have their own herds of dairy cows which co exist with the natural habitat for wildlife in the Brue Valley. There are brown trout in the pools of the River Brue with Kingfishers often seen in the uncultivated areas which we leave to encourage them and the lap wings which visit us annually. We are keen that our business has a minimal impact on the environment that we live in and that is partly why you will see solar panels on the roofs of our cow buildings and our business focused on minimizing our carbon footprint, so that future generations can enjoy this area as much as we do.

RECIPE SUGGESTION ‘JUST DELICIOUS’ CAULIFLOWER CHEESE


Soak the cauliflower in cold water for about 15 minutes, and then break into florets. Cook in a little boiling water in a covered pan until tender and arrange neatly in a heatproof dish. To make the ‘Just Delicious’ sauce, melt the margarine, add the flour and cook for one minute. Remove from the heat and add the milk gradually. Bring to the boil stirring well. Cook for a minute, remove from the heat, add the seasonings and grated ‘Just Delicious’ Cheddar, and stir until melted. Coat the cauliflower with the ‘Just Delicious’ sauce. Mix the extra ‘Just Delicious’ Cheddar and breadcrumbs and sprinkle over the cauliflower. Brown under a hot grill. Serve hot.

 1 medium-sized cauliflower


 25g/1oz grated Wyke Farms ‘Just Delicious Extra Mature Cheddar


 1 tablespoon breadcrumbs  300ml/ 1 sauce:


/2 /2 pint milk

 25g/1oz Ivy’s Original Farmhouse Butter  25/1oz plain flour  300ml/1


 100g/4oz grated ‘Just Delicious’ Cheddar  level teaspoon salt  1 level teaspoon mustard  pinch of nutmeg
