Easy Cooking with MOORE


I roasted a chicken for Sunday dinner the other night and since there were only the two of us, there were lots of leftovers. I also had in the fridge, a half jar of butter chicken sauce that needed using. Here’s something I tried when, at the last minute, a friend


came over to watch the hockey game. I served it with an interesting salad made with some of the fi rst greens available in the garden – young kale and swiss chard leaves, some Russian Tarragon, Romaine Lettuce, Red Cabbage for colour, orange slices and candied walnuts (toast nuts in fry pan, then add a bit of maple or corn syrup and stir around until nuts are glazed) – tossed with a mustardy vinaigrette.


Butter Chicken Pizza


Crust - makes a large thick crust 14” pizza In a large bowl, dissolve 1 tsp sugar in ¼ c warm water, add 1 Tbsp. granular yeast and let sit a few minutes.


Add:


¼ cup vegetable oil 1 cup tepid* water 2 ¾ cups fl our


Knead well. For a crunchy bottom, sprinkle a bit of cornmeal on the counter before rolling out dough. Spread dough with Butter Chicken Sauce, then 1 cup grated mozzarella cheese Diced cooked chicken


Chopped mild onion, green or red pepper, and some sliced black olives ½ cup crumbled Feta cheese


Bake in a very hot oven (475°) for 10-12 minutes. For a crisp crust, turn oven up to 500° for last 5 minutes. You may have to turn on broiler to brown top.


*Someone walked into the local gardening shop and asked where the tepid water was!


Another idea for leftover chicken: Curried Chicken Salad


Diced up cold chicken Celery Grapes (Black ones are particularly good) or Diced Apples Stir Curry Powder into Mayonnaise for the dressing. Delicious!


The chicken carcass always ends up in the soup pot or the freezer for later. Put strained broth in the fridge overnight then skim off the fat before making soup.

As winter is soon approaching it is a must to prepare your RV for proper storage throughout the off -season.


If your unit is equipped with a roof mounted air conditioner,


there are two items you should address. First you should always install a vinyl storage cover. T is will keep the snow from entering the roof-mounted portion. If snow accumulates inside, it will thaw in the spring. T ere is a drainage hole in the A/C pan, which can ice over. If this occurs the thawing snow has nowhere to go but inside your RV. Secondly, from the interior you should drop down you’re A/C grill


and check the four retaining bolts for tightness. T ey are located in each corner of the roof cutout. T e bolts don’t actually come loose, but in fact the foam gasket will become compressed and lose its ability to spring back. You may be surprised on how loose the bolts seem to be. Be sure to remove your RV battery even if you have solar. Once a


solar array is covered in snow, it loses its eff ective charge rate. Depending on the size of your RV, be sure to install a moisture


removal kit. Be certain to do a visual check of all roof sealants, mouldings


and windows. If you are uncertain, please have your dealer inspect it for you. If you have a slide room, this would be a good time to use a slide-


out seal conditioner as well as a slide rail lubricant. While lubricating the seals, please have a visual check of each one. T is is what keeps water out. Your local dealer can advise you on the proper products to purchase. Please do not tarp your RV. T ere are proper RV-style covers


to fi t each model and size of RV. T ese breathable covers are made specifi cally for RVs and will also allow you access inside if you like. You can spend $500 average for a proper cover, or thousands in the spring by using a tarp. Lubricate all your locks, stab jacks, etc. T is is just a basic guide of items to do for winter storage.
