STRAWBERRY BELLINI

The strawberry purée here is a great base for a variety of cocktails. Once you’ve mastered this Bellini, why not try it in a strawberry mojito? Simply muddle mint, strawberries and lime together, shake together with the purée, rum and sugar syrup, and top with apple juice and stir.


INGREDIENTS strawberries vanilla extract Champagne or sparkling wine, like prosecco


METHOD – Blend the strawberries and vanilla extract together and pass through a sieve to create a smooth purée. – Pour 25ml of the purée into a Champagne flute and top with your chosen sparkling wine. Serve with a stirrer.

VODKA BASIL COOLER

INGREDIENTS 4 basil leaves 50ml vodka juice of ½ lemon 25ml sugar syrup


METHOD – Muddle the basil leaves in a glass. – Shake the remaining ingredients together with ice and strain over the basil and fresh ice.
