Who knows the menu best? Who makes the greatest impact on your experience? Front-of-house is your friend!

also get many people from all over the world. Most of them are just in for a bite to eat, or perhaps it’s a family looking to spend some quality time together.

What are the best-selling dishes at the moment? All of our pizzas are fantastic sellers, but I think the 8oz sirloin steak just pips them all. When the customers learn that it’s locally sourced, from Bakers Butchers in Witney, they know that they’re in good hands.

What are the best-selling drinks? The answer to that is easy: Olde Trip beer is by far the best seller. We sell a lot of real ale all year round, but when the sun is shining our selection of cocktails and fruit ciders are also extremely popular.

What, to your mind, makes The Golden Pheasant such a special place to visit? The building itself is crammed full of history, and the fantastic team that we have built up over the last year makes for a friendly and vibrant atmosphere. Whether dining in the restaurant or staying in one of our 12 rooms, you’ll always be well looked after. Legend has it, we also have a smoking ghost!

If you were a customer today, what would you order? I would go for the free-range Cajun burger – a whole chicken breast topped with roasted pepper and mozzarella cheese in a butter-toasted ciabatta bun, served with fries, and paprika and honey mayonnaise. It’s mouthwatering just describing it to you!

Are The Golden Pheasant customers good tippers? It really depends on what type of food they have, as usually small meals don’t demand a lot of work on the waiting staff ’s part. But if people have enjoyed their visit then they usually leave something, which is greatly appreciated.

TIM CROFTS, front of house manager at The Golden Pheasant, Burford

How long have you been at The Golden Pheasant? I’ve been working here for one year now.

And what’s the best thing about being at the restaurant? I enjoy the rapport I’ve built with the local customers, and meeting different people on a daily basis. You definitely don’t get that in an office job!

What skills have you learnt since being here? My communication skills have increased certainly, and my people management has definitely improved.

What sort of customers do you get? Well, we obviously have our local drinking trade, but we

Where do you like to eat on your days off? I don’t have a preference, but as long as the location is nice, and the food is fresh and appealing, I’ll try it. My wife and I enjoy visiting The Spice Lounge, which is just a few doors down from us, and I’ve got my hungry sights set on a visit to The Daffodil in Cheltenham.

What do you cook at home? I do all the cooking, as my wife has the power to burn lettuce! I like making curries at home and enjoy replicating the flavours of the Middle East. ✱ www.goldenpheasantburford.com
