Sure, port is delicious on its own, with cheese and even in a Cheeky Vimto (come on, we’ve all done it at one stage or another…) But this cocktail makes for a truly refreshing summer sip.
INGREDIENTS 1 strawberry 25ml sugar syrup 100ml port juice of ½ lemon soda
METHOD – Muddle the strawberry and sugar syrup together. Add the remaining ingredients (except for the soda), ice and shake. – Fine strain into a glass and top with soda.
GRAPEFRUIT and CHAMPAGNE MOJITO

INGREDIENTS 8 mint leaves 15ml freshly squeezed lime juice 2 brown sugar cubes 50ml pink grapefruit juice 25ml Havana Club Rum mint sugar, optional (simply blitz together granulated sugar and fresh mint) Champagne
METHOD – Muddle together the mint, lime juice and sugar, then add the grapefruit juice and rum, chuck in lots of ice and shake like crazy. – Decorate the rim of a jam jar with the mint sugar and tip in the contents of the shaker tin. Top with Champagne.
