“That’s when the cork sticks out of the bottle a bit and it tends to overlap the rim of the bottle opening,” Mapes explains. “That could cause problems down the line when the collars are applied.” Dan makes a few mistakes at first, and everyone makes him the butt of some good-natured ribbing, which this chemical engineer takes in stride. But it isn’t long before he gets it down and each bottle comes out perfect. After corking the wine, Dan passes the bottles to his


wife Mary, who wipes them clean so that they can apply the “collar.” The collar is that synthetic plastic seal that goes over and around the neck of the bottle. Mary transfers the bottles with loose collars to Ken’s wife, Ginny Mapes.


The last step of the process is the shrinking of the collar snugly against the bottle neck. For this, Ken Mapes has a special tool designed specifically for the purpose. It is a device that looks kind of like a hair dryer, but it is much, much hotter. Ginny positions this tool over the bottle and its loose collar. Moving it downward precisely, she slides the heater over the neck of the bottle and holds it for a count of five seconds. When she carefully removes the device, the collar has been shrunk tightly around the bottle protecting the cork. That’s generally the way it works. Of course with characters like Ken and Dan involved, there is much joviality and tongue-in-cheek commentary involved in the process. If we hadn’t been observing them all morning, we might be inclined to think that they had been sampling their product since dawn, but such was certainly not the case.


The giddiness derives, instead, from sheer exhiliration. And, let’s face it, Mary and Dan Marlin had earned right to feel a bit giddy. They were seeing their four years of fighting off yellow jackets, of picking grapes at night, and fermenting and racking all come to fruition in beautiful bottles of rich, purple goodness. And that in itself is a heady wine.
