W


ith two restaurants already well- established in Orange County, Inka Mama’s recently opened its


newest location in the Talega Shopping Center in San Clemente. Originally launched in Foothill Ranch


in 2001 by sisters Angela Kishijara and Martha White, this restaurant quickly gained popularity for its interesting and de- licious dishes. Before long it opened in an- other location in Aliso Viejo, and then with a desire to open somewhere further south, the sisters found San Clemente to be a per- fect spot to establish their third restaurant. Run by a genuine Peruvian family the


food is as authentic as it gets, with recipes straight from the sister’s mother. Due to an upbringing on the Northern Coast of Peru where there were plenty of places to fish, seafood is one of the main staples of the Inka Mama family’s menu, as well as many dishes that include chicken, beef and veg- etables. And most of the dishes are made with a mixture of herbs and spices, espe- cially garlic and cilantro, creating the dis- tinctive taste that differentiates Peruvian food from other cultural cuisine, and yet also somehow connects it. Eclectic in its origins, Peruvian food


combines influences from the Spanish and the Japanese, with a unique mixture of fla- vors that has exploded over the years. It has created a taste which many of us are
