ccording to figures from Mintel, the UK cake, cake bars and sweet baked goods sector saw double-digit value sales growth in
2022 and it seems to be showing no sign of slowing down, even in the midst of HFSS product location restrictions. Chocolate flavours have an important role to play, with 90% of consumers believing it improves the tastiness of cakes and sweet goods, according to Puratos’s Taste Tomorrow research. In recent years, blonde or ‘gold’
chocolate has grown in popularity – due to its caramelised white chocolate flavour profile and interesting colouring. But, without all-in-one cake mixes to offer this novel taste profile, blonde
chocolate has really only appeared in icings and decorations for cakes and not in the sponge itself. This has recently changed, with Puratos UK adding its first blonde cake mix to its Satin Crème cake mix range in October 2023. Available for a limited period, Satin Crème Cake Blonde enables bakers to create cakes with a creamy white chocolate taste and caramelised hue. The new flavour is said to be suitable for creating muffins, cakes,
pancakes, cookies and more. The blonde cake mix was developed
by Puratos in response to the emerging blonde chocolate flavour trend, to offer bakers greater flexibility to create the cake flavours that are being demanded by consumers. “Satin Crème Cake Blonde has been thoroughly trialled to ensure the mix works effortlessly with inclusions such as chocolate or fruit without the risk of sinking ingredients,” says Lydia Baines,
