and helps build muscle mass, it is also essential to consume an adequate amount of fibre. Doing so helps maintain a feeling of satiety and can contribute to gut health by breaking down into short-chain fatty acids in the colon. Unfortunately, however, many people are not currently consuming the recommended 30g of fibre per day. Also, the suggested amount of protein intake for athletes – 1.2 to 2g of protein per kilogram of body weight – can be difficult to achieve, especially for those eating fewer animal products or none at all. Plant-based bars, with increased protein or fibre content can therefore provide a good solution to enable active people to meet their nutritional needs.” To create tasty vegan bars with
added value, such as protein or cereal bars, manufacturers need to source ingredients that can both improve the nutritional profile and enhance the sensory properties of their product offerings. “To help meet this need we have developed a range of extruded, wheat-based crispies which are available in two different sizes,” continues Marjolijn. “Their main feature is a high protein

content, of around 60-70%, while the larger version also scores with a fibre content of around 17g per 100g.” The crispies are made by hot extrusion – a high-temperature, short-time process in which a viscous mass is forced through a die. For the small crispies, wheat protein is combined with flour and starch. Other ingredients, such as cocoa powder, can also be added to create specific flavours, if required. This mixture is then plasticised with water in a double screw extruder using mechanical and thermal energy, before being cooked and formed into crunchy crispies through nozzles. To give cereal bars a crunchy
effect and improve their nutritional profile, Marjolijn explained how the extrudates can be used as a crispy
topping. However, they are also said to be effective when incorporated into protein bars. “Typically, protein bars have a smooth, slightly sandy mouthfeel. With our crispies range it is possible to add a little crunch to this texture. Crispies can also be used as a crunchy highlight in cereals or muesli, or on their own.”
An all-round good nut Almonds can be a good addition to cereal bars, ticking many of the boxes that consumers are demanding today – in addition to containing nutrients that can help promote overall health they also provide a good source of protein, fibre, healthy fats, and vitamin E.
