VALLEY DINING VALLEY FITNESS/FOOD AND DRINK


Serves 4 comfortably with plenty left over Ingredients


1 leek, 2 sticks celery, 4 cloves garlic, 1 onion, 2 sprigs rosemary, small bunch of thyme and a handful of flat leaf parsley tied together into a posy. Juice of 2 lemons, 2 tablespoons vegetable oil and a knob of butter, 11tre good stock of your choice, 50g each cubed winter root vegetables (celeriac, sweet potato, butternut, turnip, swede, parsnip, carrot and of course potato), 150g cooked pearl barley, 500ml water. Salt and pepper Method 1. Place a deep heavy bottomed pan on

Chop down as fine as you can or blitz in a food processor the leek, celery, garlic and onion and add to the pan along with the herb posy and allow to sweat gently for 10 minutes taking care not to brown. 2. Add all the cubed root vegetables stir

However, if you reduce your carbohydrate intake you also reduce the sugar store in your muscles which hold a lot of water, so as you lose weight you lose water, not fat. As your levels of sugar fall, so levels of acid rise and to compensate your kidneys borrow calcium from your bones. Eventually they are unable to keep up and osteoporosis can set in making bones weak and brittle. Those who choose this type of diet rarely lose any more weight than those chosing a healthy balanced eating plan and regular exercise.

go by. A great website to try which might help clear your mind is www.mypyramid.gov which gives you a great outlook on the balance of good health. Squat, Curl, Press I AM a massive fan of dynamic exercise -


exercises that keep joints and muscles moving all the time to burn as many calories as possible. Good examples are swimming, walking, cycling and weight training. The Squat, Curl, Press is a great move for


helping burn off those unwanted calories from festive parties.


As I have said in a previous issue, start in a

your gluteals slowly down to the rear keeping the weight in the heels at all times. From here stand back up nice and tall and curl your weights up towards the middie of your chest area working your biceps.


The finai part of the move requires you to


take the weights and rotate them to the outer part of the shouider and simply press straight up to the ceiiing.


To finish the move return your weight back


to the side of the body and start your next repetition.


Aim to compiete as many reps as possible


with good form. Take your time, remember practice make

Southern Rhone, geographically the "best" in between Rhone and Provence.


The area is dominated by a 6,000 ft


mountain, Le Mont Ventoux, which literally means the "Windy Mountain." Fellow cyclists will be very familiar with the mountain as it features regularly in the Tour de France cycle race. It was on this mountain jn 1968 that one of Britain's best ever bike riders died on "The Tour." Cotes du Ventoux 2006 is a red wine,


produced from the combination of the syrah and grenache grape varieties. It contains 14% alcohol by volume, so treat with respect. The area is producing large quantities of quality, mainly red, wines and is becoming more and


more populat as an obvious choice to the more expensive French wines. To get a broader view on this wine’I took it to


a dinner party of discerning wine drinkers for their views. I removed the label to make sure they had no preconceived opinions and the tasting began. Red fruit, plumy, blackberries was the first opinion. Could it be Rioja said one I think Its French said another. They thought it was from the South, could be Provence. Well not far away. It was certainly good fun and got the dinner party off to a good start
