1. Make the base for the cheesecake by crushing
the biscuits to a crumb, alternatively whizz in a food processor, add the melted butter and mix. 2. Line the base of a 20cm springform tin \vith
non-stick baking parchment. Tip in the bread crumb mixture and use the back of a spoon to cover the base evenly. Cover with cling film and chill in the fridge for upto 24 hours 3. Break the chocolate into pieces and place in a

BOASTING more than 9,000 entries from which 5,628 were award-winning wines, the International Wine Challenge has become THE most impor tant wine occasion and the best and biggest blind wine tasting event in the world. Starting in early April, more
than 40,000 bottles of wine start arriving at the Barbican Centre in London. Each is logged, categorised and coded by grape variety, style, country and region of origin in time for the'first day’s tasting on April 24th. In the first round, all wines are tasted blind, and par ticular regions are pitted against each other. For the tasting process wines
are put into “flights” of between eight and 20 wines. Tasters must ensure they match up the correctly tagged wine, taste and evaluate on a scoring system of one to 100, wines scoring 85% and above are deemed medal worthy and sent on to the next round. Up to 1,500 wines are tasted daily. More than 465 tasters took part this year, including jour nalists, wine makers and wine merchants as well as 42 Masters of Wine. The gold, silver and bronze
awards have already been made public at the Wine Trade Fair in May, but the trophy winners will not appear in press until September. My sources have revealed the

and mascarpone then stir in the melted chocolate. Spoon onto the base and put back in the fridge for at least three hours. For the summerfruit sauce 1. Place the summerfruits in a pan (defrost
first if using frozen), add sugar to taste, when softened blitz with a hand blender. The blended summerfruit is fine to use at this
stage with cheesecake, however if you wish to create a coulis style sauce then add the blended fruit either a liqueur of your choice (we use Cointreau) or blackcurrant cordial mixed with water (we use both liqueur and cordial) this will then loosen the fruit mixture. Finally pass through a sieve, the coulis is now ready to use. Serve in slices with a little of the coulis driz zled over it and the rest at the side.
