GRILLED AUBERGINES WITH CHILLI PEPPERS AND MINT
THE lively bite of chilli peppers is great for reviving jaded palates, but there is more to these little firecrackers than meets the eye. i In animal studies chillies have been shown to help reduce blood cholesterol levels and scientists have suggested that eating chillies can help alle viate the nasal congestion associated with colds. Some reports suggest that chillies can help to
protect against gastric ulcers by causing the stomach lining to secrete mucus which protects it from damage by irritants such as aspirin or alcohol. Now in the third week of the New Year, don't
forget to start living a healthy life by trying to do more exercise, even if its only taking the dog a walk, stretch yourself and the dog by going a lit tle further each day and including a heart pound ing hill climb. I t is also a good time to try a detox for a couple
of days, laying off alcohol and caffine as well as meat, bread, pasta and dairy products and instead drink lots of water and eat only fruit and raw vegetables. ' The key word is moderation. Eat a balanced diet and choose foods low in fat, salt and calories. Choose fruit and vegetables that are different colours such as tomatoes, swede and runner beans and eat at least five portions each day. Canned or frozen vegetables also count
towards the target. This recipe features aubergines which given half a chance will soak up oil like a sponge with water so salting and grilling offers a lighter option to frying. The aubergine slices become charred and
smoky on top but soft and succulent in the mid dle. This gutsy dish, spiked with chilli and mint, is wonderful served warm with a Sunday roast of lamb or with a grilled piece of chicken. I t also makes a great cold salad with some crumbled feta cheese on top.
Ingredients
• 2 medium aubergines, about 450g total weight • Salt and ground black pepper • 1 small bunch fresh mint • A good fruity olive oil • Juice of 1/2 lemon • 1 teaspoon finely chopped red chilli • 200ml tub reduced-fat houmous • 8 tablespoons low-fat natural yoghurt • 25g pine nuts
Method 1. Thickly slice the aubergines into chunky
rounds about 1cm / 1/2 inch thick (if they're too thin they -will just burn and stick). Make a few quick shallow slashes across each flat side then sprinkle the aubergines lightly with salt and set aside while you make the mint dressing. 2. Chop the mint quite roughly, then stir together with 2 tablespoons of the olive oil, the

under the grill for 1-2 minutes until toasted. Lift the aubergines off the baking sheet and on to a warmed plate. Spoon the mint dressing over and around the aubergines and serve hot with the houmous to dollop on top and a sprinkling of pinenuts.
Daring duo take on the ghosts and ghouls of historic Samlesbury Hall
A DARING Kibble Valley shop owner has raised more than £600 after spending a spooky night at Samles bury Hall. Mrs Mandy Paul, who
runs Hudson Ices, in Chat- burn, fearlessly stayed at the haunted hall, near Blackburn, along with her sister, Mrs Linda Hay- hurst, of Earby, in a bid to boost funds for its roof appeal. 'The brave pair, who
stayed by themselves in the Great Hall without any electricity, tailed to be daunted by the creepy
experience, which they described as “fantastic”. Mrs Paul, who has a
keen interest in the spirit world, recalled one of the experiences she witnessed during the event. “I kept seeing something
moving in the corner of the room, so I took a photo graph. “Once it was developed,
it showed the figure of a man, believed to be a previ ous owner of the hall dur ing the 1800’s, who had shot himself.” Other chilling moments the women encountered

awake throughout the night, said it was an adven ture worth doing and one they would definitely do again. The 14th Century hall,
which has been owned by trustees since the 1920s, needs to raise £250,000 to repair the entire roof. The pair would like to

A The walk then went W northwards in the fine ^ dales countryside between ^ Little Stainforth and the remote village of Feizor, with the fine summit of Smearsett Scar towering
above. A climb to the Celtic Wall, also visited last week, was followed by a visit to Dead Man’s Cave, with its impressive and intimidating entrance explored by some of the braver members armed with torches. Tea was taken in the
shelter of a limestone wall, then a pleasant walk brought them to Feizor itself, seemingly deserted in its secret place. From here on the paths became rather muddy, particularly by the gateways. The weather, which had
been quite pleasant throughout the walk, became dark and murky, but the rain managed to hold off until the very moment the walkers returned to their starting
point.
Wiuter trip to suuuy shores
PUPILS at Stonyhurst Col lege enjoyed a trip to Egypt during the Christmas holi
days. A group of eight pupils and
four staff went to Sharm-el- Shiekh, scuba diving around various sites in the Red Sea. Pupils from Years 10,11,12
and 13 were involved. Simon Andrews, director of
studies at the school, was in charge of the scuba diving trip. He said: “ I think every body enjoyed diving with the colourful fish and coral in the
Red Sea. “I ’ve received a lot of good
feedback from th e pupils about the trip and many of them would like to go again. “It was also marvellous to
escape the typical Lancashire weather in December, to go to the lovely weather in Egypt.”

Clitheroe, who have instigated several fund-raising events over the last few weeks with the help of other groups such as Clitheroe Lions, say th ey have been astounded by the generosity of people in the Ribble Valley. With much of the money Gift Aided, it
could soar to as much as £14,000. Two street collections, one held on Tues
day, January 4th, and the other on Satur day, January 8th, were met with amazing generosity, despite atrocious weather con
ditions on both days. So far £9,000 has already been used to buy 36 Aquaboxes - each one providing 33,000 litres of filtered clean water to those living in the most dev astated areas. Meanwhile, the Rotary Club of Ribbles-
dale hasw raised approximately £2,200 after holding two collections at Booth's supermarket in Clitheroe on Friday, Jan uary 7th, and Saturday, January 8th. They thanked all those people who gave
donations. Rotary Aquabox donations can still be
handed in at The Old Post House Hotel, Althams Travel, Primrose Garage, Honey well’s Estate Agents, Sowerbutts Furni ture, Barrie Lancaster Insurance, Castle Finance, Moor Lane Motors and Dawson’s department store.
