Additionally, 92% of consumers agree that enjoying occasional baked treats is perfectly acceptable, according to 210 Analytics, highlighting the enduring appeal of the bakery category.


This session will guide participants in reimagining classic bakery items, such as updating a traditional chocolate chip cookie with health-forward ingredients or enhancing a pound cake with bold, global spices. By balancing nostalgia with creativity, brands can connect emotionally with consumers while standing out in a competitive market. The final session, “Global Mornings: Infusing International Flavors into Breakfast Bakery Selections”, takes a global approach to breakfast trends, exploring how international flavors are transforming the first meal of the day. As consumers become more adventurous with their palates, breakfast menus are evolving to include exciting options like Japanese matcha pastries, Middle Eastern za’atar rolls, and Latin-inspired churro waffles. According to Technomic, 65% of consumers express curiosity about global flavors, while 49% of Gen Alpha identify as adventurous eaters. Breakfast delivery is also growing faster than other mealtimes, further emphasizing the opportunities for innovation in this space, as noted by Square.
