• Blending mint with huckleberries is a buzzy combination for bakeries, with conversations up by 26% in the last year.
• Lemon cardamom is a trending topic, especially for cakes, where conversations increased by 14%.
• Elderflower and honey are emerging as a potential pairing with appeal in bakery items like
donuts.
While herbs are familiar in savory baked goods, brand guardrails will frame where bakeries can travel with herb and botanical flavors on the sweet side of the aisle. Flavor suppliers with insights capabilities can help identify pairings that have potential with bakery shoppers.

The classic coffee-cocoa-mascarpone flavors in tiramisu cake are now extending into tarts and layered cookies. Because the translation of tiramisu is ‘cheer me up’ or ‘pick me up,’ some bakeries are exploring non-traditional flavors like white chocolate or Biscoff.
The coziness of banana bread continues to connect in the bakery. Online discussions give accolades to the marriage of banana bread flavors with another classic – chocolate chip cookies. Another buzzy blend is banana bread carrot cake with conversations up by 21% in the last year as a flavor that gets kudos for combining two favorites.
BREAKING BORDERS WITH BAKERY
Familiar internationally inspired flavors will resonate with bakery shoppers, while more novel tastes can attract flavor adventurers. Researching iconic treats can bring news to the in-store bakery and build a cultural bridge.
For example, Montreal bagels, the smaller, denser, sweeter alternative (boiled in honey water before baking) to traditional bagels, are now available in New York, Texas, California, and the Northwest. In 2014, bakeries developed the cragel, a Montreal bagel in croissant form, and the variation is still creating buzz, with discussions up 29%.
Single cake slices are often part of in-store bakery cases for the convenience and affordability of a little treat. Petit gateaux, small, elegant cakes (usually chocolate) with cream fillings and crunchy exteriors, may represent another format that brings international flair to the bakery. Variations that complement the chocolate base include caramel, passion fruit, raspberry, hazelnut, or peanut butter.
