each bite, I enjoy my, perhaps, fifth pastry of the day — but who’s counting — washing it down with IPA beer made from the bakery’s surplus bread as part of its zero waste goals. As we finish up, licking my fingers happily, I realize I’m finally moving at Copenhagen pastry pace.
