egend has it that Dionysus, god of wine in Greek mythology, fell deeply in love with Ariadne, daughter of the King of Crete. To prove
his commitment to her, he threw her golden crown into the heavens, where its jewels changed to stars so that they could shine forever as the constellation Corona borealis. Here on earth, the fresh ripe grapes used to create the “nectar of the gods” are hand-picked under the stars in the cool of night to retain their flavour and aroma. It’s only fitting, then, that the jewel of the vintage-only Krone Méthode Cap Classique collection be named Krone Borealis – a bottle of sparkling wine that’s full of “stars”.
THE BLEND Traditional grape varieties (90%
Chardonnay, 9% Pinot Noir, 1% Pinot Blanc) are all harvested in the cool of the night. Krone Borealis is bottle-
fermented and then matured on the lees in underground cellars. Iridescent gold in colour, the oyster shell and chalky limestone character gives way to pineapple, fresh yellow apple and salted caramel flavours with a fine, persistent mouth-filling mousse. Think creamy textures on the mid-palate, with some baked pie-crust flavours and a refreshing, tangy finish.
TRY WITH: Naked oysters, ricotta and roasted tomato bruschetta with
pancetta, lime-dressed angelfish ceviche, creamy porcini risotto or fire-roasted lemon-and-black pepper chicken kebabs.
