SQUASH VARIETY


HOW TO BUY Look for small SUGAR PUMPKIN


pumpkins (about 5–7 lbs) with dull orange skin and no soft spots near the stem end.


ACORN SQUASH


Look for smooth, dull green skin (orange and yellow spots are fine). Well-defined ridges will be easier to cut into wedges.


Look for squash with a wide neck and small bulb (these are easier to peel and chop). Find precut


BUTTERNUT SQUASH

HOW TO PREP


Remove the stem, cut in half, and remove the seeds. You can also remove the top and


scoop out the seeds just like a carving pumpkin.


Trim the stem end.


Lay the squash on its side and cut in half. Remove seeds.


For wedges, turn halves cut-side down and use the ridges as a guide.


Trim the ends. Cut


crosswise where the neck meets the bulb, then peel. Halve the bulb end and


remove seeds, then slice or cut the squash into chunks.

Look for squash with firm skin, a pale golden color, and no cracks.

water to 1 part bleach. Rinse and dry well, then coat with a matte or shiny sealing spray.
