GRILLED CANTALOUPE WITH ALMONDS AND FETA


GRILLED OKRA WITH SEASONED SALT


A quick turn on the grill is all that’s needed to enhance the juicy sweetness of ripe summer melon.


PREP TIME 5 MIN. –COOK TIME 5 MIN. READY IN 10 MIN. –SERVINGS 6


1 small cantaloupe ¼ cup smoked almonds 3 cups packed arugula


2 tbsp olive oil 2 tbsp balsamic vinegar ¼ cup crumbled feta


STEP 1 Set grill to medium-high. Cut the cantaloupe in half. With a spoon, scrape out and discard seeds. Cut peel off cantaloupe. Cut each half into 1-inch- wide wedges. STEP 2 Grill cantaloupe 2 min. per side, until grill marks appear. Remove from grill and place on a paper towel. Let cool slightly. STEP 3 Meanwhile, finely chop the almonds. On a large platter, arrange the arugula and top with cantaloupe wedges. Drizzle the oil and vinegar over cantaloupe. Sprinkle the feta and almonds on top. Season with salt to taste.

PREP TIME 15 MIN. –COOK TIME 10 MIN. READY IN 25 MIN. –SERVINGS 6


1 lemon 2 tsp salt ¾ tsp smoked paprika ½ tsp cumin


¼ tsp garlic powder 1½ lbs fresh okra Metal or soaked bamboo skewers 3 tbsp olive oil


STEP 1 Set grill to high. Grate 1 tsp lemon zest into a small bowl. Cut lemon into wedges and reserve. In small bowl with zest, combine salt, paprika, cumin, and garlic powder. Season with black pepper. STEP 2 Thread the okra onto 2 parallel skewers. Brush with the oil. Grill okra until slightly charred and tender, 5 min. per side. STEP 3 Transfer okra to a platter. Serve immediately with seasoned salt and lemon wedges.
