Fontina, ham, and sun-dried tomato grilled sandwiches
Spread 1∕3 cup mayonnaise on 8 slices multigrain bread and
turn mayo-side down. Spread the other side with ½ cup sun-dried tomato pesto. Divide 3 oz fontina cheese and 4 oz sliced ham on top of pesto and top with remaining bread slices, mayo-side up. In a hot skillet or grill pan, cook 2 sandwiches on medium for 8 min., flipping halfway through, or until golden brown and cheese is melted. Repeat with remaining 2 sandwiches.
Grilled goat cheese, tomato, and arugula sandwiches
Thinly slice 2 tomatoes. Spread 8 slices white bread with 1 (4 oz) pkg softened goat cheese. Top 4 slices with tomato and 1½ cups arugula. Place remaining bread on top, cheese-side down. Spray outside of sandwiches with cooking spray. Spray a grill pan or skillet with cooking spray and cook 2 sandwiches on medium 7–8 min., flipping halfway through, or until toasted and warmed through. Repeat with remaining 2 sandwiches.
