COCONUT SHRIMP WITH THAI DIPPING SAUCE


SESAME TERIYAKI BEEF SKEWERS


Sweet, crunchy, and spicy, these make a fantastic snack for any festive party.


PREP TIME 15 MIN. – COOK TIME 15 MIN. READY IN 30 MIN. – SERVINGS 8


1 small jalapeño ½ tbsp fresh ginger 1 large lime 2 tbsp fish sauce 1 tbsp coconut palm sugar or light brown sugar 3 tbsp coconut flour, such as Bob’s Red Mill


2 eggs 1 cup unsweetened


shredded coconut 1 cup panko bread crumbs 1 lb large frozen tail- on shrimp, thawed ½ cup coconut oil


STEP 1 Stem and halve the jalapeño lengthwise and remove the seeds. Slice thinly. Peel the ginger and chop finely. Juice half the lime and cut the other half into wedges. STEP 2 In a small bowl, combine the ginger, half the jalapeño, lime juice, fish sauce and coconut palm sugar. Add more jalapeño, if desired. Set dipping sauce aside. STEP 3 Spread the coconut flour on a large plate. Crack the eggs into a pie dish and beat lightly. Combine the shredded coconut and panko and place in a third large plate. STEP 4 Pat the shrimp dry with paper towels. Dredge each shrimp in coconut flour, then dip in the egg mixture, and then coat with the coconut- panko mixture. STEP 5 Heat the coconut oil in a frying pan and fry the shrimp in batches for 3 min. or until golden and crisp. Turn halfway. Remove shrimp with a slotted spoon and drain on paper towels. STEP 6 Place the shrimp on a platter and serve with lime wedges and dipping sauce.

½ cup Nature’s Promise Organic Sesame Teriyaki Marinade 2 tsp cornstarch 1 tbsp brown sugar


½ tsp garlic powder ¾ lb sirloin steak 16 bamboo skewers, soaked 2 tsp sesame seeds ¼ cup cilantro


STEP 1 Preheat broiler to high. STEP 2 In a medium bowl, combine the teriyaki marinade, cornstarch, brown sugar, garlic powder, salt, and pepper. Thinly slice the steak on an angle and cut to form approximately 4-inch-long and 1-inch-wide strips. Add steak to bowl with marinade mixture and toss to coat. Let stand 10 min., or refrigerate for 2 hours. STEP 3 Thread steak strips onto skewers. Arrange in a single layer on a foil-lined baking sheet. STEP 4 Broil 5–7 min. per side, until cooked through and charred in spots. Garnish the skewers with the sesame seeds and cilantro.
