FRENCH BREAD PEPPERONI

1 loaf French bread 2 red bell peppers 1 (8 oz) pkg fresh mozzarella 1 cup Nature’s
Promise pizza sauce 16 thin slices salami
1 (5 oz) pkg Nature’s
Promise spring mix 2 tsp extra virgin olive oil 1 tbsp balsamic vinegar
PIZZAS Slices of salami stand in for pepperoni in these tasty pizzas. Serve for dinner or as a hearty after-school snack.
STEP 1 Preheat the oven to 350°F. Cut the bread in 4 equal-sized pieces and then halve each piece lengthwise. Remove the stems from the peppers and cut into thin rings. Slice the mozzarella into 16 thin slices. STEP 2 Brush the cut side of each piece of bread with 2 tbsp pizza sauce. Top with 2 slices of salami, overlapping slightly and 2 slices mozzarella. Scatter over the pepper rings. STEP 3 Place the pizzas on a parchment-lined baking tray and bake for 15 min., or until cheese is melted and bubbling. STEP 4While the pizzas are baking, place the spring mix in a salad bowl and drizzle with the olive oil and balsamic vinegar. Season with salt (in moderation) and pepper and toss. Serve pizzas with the salad.
