SPINACH, HAM AND CHEESE

8 slices multigrain


bread 1 onion 1 red bell pepper 4 oz ham 2 tbsp olive oil


1 (8 oz) bag triple-washed spinach 1 cup grated Cheddar cheese 1 tsp dried oregano


STEP 1 Preheat the oven to 400ºF. Place bread slices on a baking sheet and toast in the oven for 8 min. turning once, until crisp. While bread toasts, dice the onion and red bell pepper. Cut the ham into strips. STEP 2 Heat the oil in a skillet and fry the onion and pepper for 3 min. Add the spinach and 2 tbsp water and cook for 3 min., or until wilted. Raise heat to cook off any liquid in the pan then remove from heat. Add the ham and season to taste with salt (in moderation) and pepper. STEP 3 Slice the bread slices in half diagonally and place in an overlapping pattern in a greased 9x9-inch baking dish. Top with the spinach mixture. Sprinkle over the grated cheese and oregano. STEP 4 Bake 15 min., or until golden and crisp.
