CHOCOLATE-COCONUT

ENERGY BARS These are completely addictive. Because coconut oil melts at room temperature, keep these chilled until right before eating.

PREP TIME 15 MIN. – COOK TIME 0 MIN. + WAIT TIME 30 MIN. – READY IN 45 MIN. – SERVINGS 6

20 dried dates ¼ cup whole almonds 1 tbsp mini chocolate chips 2 tbsp coconut oil

1 tbsp shredded, unsweetened coconut 1 brown rice cake, crumbled

STEP 1 In a food processor, grind the dates for 1 min. until they form a paste. Transfer to a bowl. Add the almonds and chocolate chips to the food processor and pulse to the consistency of coarse breadcrumbs. Transfer to the bowl with the dates and add the coconut oil, shredded coconut and crumbled rice cake. STEP 2 Knead until smooth and pat into a 7x4-inch rectangle. Wrap in parchment paper or plastic wrap and chill 30 min., or until set. Cut into 6 bars and store, tightly wrapped, in the refrigerator.

Coconut oil helps make these

filling but still nutritious

PUMP UP THE PROTEIN Add a scoop of protein powder to make these even more satisfying. Add a tiny bit more nut butter or coconut oil to bind the mixture if necessary.

MAKE BITES NOT BARS Save on calories by forming the mixture into small balls. One or two will give you a quick and guiltless energy boost when temptation strikes.

KEEP ’EM FROZEN Pack wrapped bars straight from the freezer and they’ll be ready to eat, but not gooey, at snack time.

ADD A BANANA Bananas are one of the few fresh fruits that work well in unbaked bars. You’ll have to add extra oats or protein powder (or both) for the best consistency.

EASY AS 1-2-3 If you want to create your own flavor combos, try this simple ratio: 1 cup toasted nuts, 1 cup dried fruit, 1 cup dates or figs. Grind everything in a food processor and then shape into bars or balls.
