EGG & TROUT TOASTS


Hard boil 4 eggs. Cool in a bowl of ice water then peel and cut into slices. Toast 8 slices multigrain bread. Flake 4 oz smoked trout or salmon and set aside. In a large bowl mix together 4 tsp prepared horseradish, ½ cup light sour cream and ¼ cup water until smooth. Season generously with ground Italian blend herbs and salt (in moderation). Add 3 cups cole slaw mix and toss with dressing. Top each slice of toast with a little salad, some egg slices and pieces of trout or salmon. Grind additional herbs over the toasts and serve.
